This wines gives up Chinese five spice, dried pineapple and floral notes before moving onto a delicately structured warm spice driven palate with a lingering acid line.
Hand-Harvested, whole bunch fermented in Anaerobic environment (dry-ice added, so remove any oxygen). Left to ferment (primary and secondary) over 4months, pressed to neutral french puncheons for 12-14months. No fining, no filtration.
