Jean Bouteille Paradiso Syrah Viognier 2021
This is one hell of a wine - highly recommended
Organically Grown Syrah from the Miegunyah vineyard in the southern part of the
Adelaide Hills.
Bottled without sulphites/Fining/Filtration : nothing but grape juice - Pur Jus Wine
Vines rooted on gorgeous rolling hills 13 kms from the ocean & perched
at 350 meters altitude on clay over silt-stone soils.
Hand-picked, the Syrah has been 100% whole bunch fermented in a Fibre-glass tank for 2 weeks where we added about 2% of Viognier to help fix the colour and enhance the aromatic. The Syrah got then pressed into a mixture of old Barriques and Puncheons for seven months before blending and bottling.
