Hand-Harvested, split into 2 portions. First portion left as whole-bunch for Carbonic Maceration (ferments over 3wks), foot-stomped and then pressed to old french hogsheads for 6months. 2nd portion only 24hrs maceration on skins and then pressed to old puncheons. Blended with no fining, no filtration.
